I’m Elizabeth, your plant-based coach!

I am a lifelong lover of all things plant-based ~ food, gardening, art, photography, and greening our planet for environmental conservation and social ethics. I have experimented with various whole food diets, eaten a vegetarian diet in many different forms, and I have been solely whole food plant based since 2020. I am witness to the transformation in my own health along with many in my own family as well as those in my community. I love that just the simple act of eating plants is so impactful to my well-being along with the well-being of our entire world.

I have been studying nutrition for seven years, and I am certified as a plant-based health coach through Food Revolution Network with over 100 hours of coach-specific training. I have also completed plant-based studies with T. Colin Campbell’s Center for Nutrition Studies at eCornell,, the McDougall Program, and Dr. Joel Fuhrman‘s Nutritarian Coach Certification.
