Buckwheat and Quinoa Pilaf

Makes 4-5 cups cooked

1 cup buckwheat groats (or kasha)

1 cup tri-color quinoa

Rinse grains in a fine sieve.

Pressure cooker: Add buckwheat and quinoa to instant pot with 2 3/4 cups water.  Cover, seal cooker, and bring up to pressure for 2 minutes. Let pressure come down for 10 minutes, and then turn to “vent,” allowing pressure to fully release and remove lid. Fluff pilaf and enjoy!

Stovetop: Add buckwheat and quinoa to pot with 3 1/2 cups water. Bring to boil, cover and then cook on low for 15-20 minutes. Turn stove off and then let covered pot sit for 10 more minutes. Fluff pilaf and enjoy!

Leftovers may be frozen.
