Bean Burgers
Serve these tasty bean burgers in whole grain buns, pita bread, or just plain topped with lettuce, tomatoes, onions, sautéed mushrooms, avocados and all your favorite burger toppings.
1 sweet onion, chopped
Mix of beans (pinto, black eyed peas, etc.) - 2 cups
1/4 cup BBQ sauce or ketchup (preferably sugar-free)
1 Tbs Worcestershire sauce
2 Tbs coconut aminos
1/2 tsp smoked paprika
1/2 tsp chipotle chile powder
1/2 tsp garlic powder
1/2 tsp thyme
1/2 tsp ground cumin
1.5 - 2 cups rolled oats
Combine all ingredients (except rolled oats) in food processor fitted with blade attachment for about 30 seconds, until a well mixed but beans are still visible. Stir in enough rolled oats to create a firm mixture.
Refrigerate for at least 15 min, but preferably for 1 hour. Preheat oven to 375. Scoop bean and oat mixture onto parchment lined baking sheets with a 1/2 cup measure. Flatten slightly into patty shapes. Bake patties for 25-30 min, flipping partway.
May be frozen and reheated in microwave or toaster oven.
