Tzatziki Sauce
Falafel, hummus and tzatziki sauce may be enjoyed with a fresh salad, cucumbers, tomatoes, fresh herbs, and/or whole grain pilaf and whole grain pita bread.
Makes 2-3 cups
1/2 cup soy milk
1/2 cup cashews (soak for 3 hours and then drain, if not using a high speed blender)
1 can cannellini beans, rinsed and drained
1/2 cucumber, peeled
1/2 lemon, juiced and zested
1-2 cloves garlic
1/4 cup fresh dill
Add soy milk, cashews, beans, cucumber, lemon juice, lemon zest, and garlic to blender and blend until smooth. Fold the dill into the sauce and then serve with falafel. Leftovers may be frozen.
