Millet, amaranth and teff pilaf
Makes 4-5 cups cooked
1 cup millet, soaked 8 hours
1/4 cup amaranth and teff grains, optional
Soak millet overnight, drain and rinse in sieve.
Pressure cooker: Add millet, amaranth and teff to instant pot with 2 cups water. Cover, seal cooker, and bring up to pressure for 10 minutes. Let pressure come down for 10 minutes, and then turn to “vent,” allowing pressure to fully release and remove lid. Fluff pilaf and enjoy!
Stovetop: Add millet, amaranth and teff to pot with 2 1/4 cups water. Bring to boil, cover and then cook on low for 15 minutes. Turn stove off and then let covered pot sit for 10 more minutes. Fluff pilaf and enjoy!
Leftovers may be frozen.
